In breading application, modified starch is used to improve adhesion between substrate and breading. Compared to the conventional adhesive recipe of flour and egg wash coating, modified starch will yield a film layer between substrate and breading which will control the moisture migration from the substrate to the breading, thus can prevent the product from becoming mushy.
